Easy Flaked Almond “Tuna” Salad by Angela Liddon of Oh She Glows is quick to prepare and tastes so good.

Angela uses soaked almonds among other ingredients to create a vegan “tuna” salad. It is light yet filling and the strong overpowering mayonnaise typically found in tuna salad is replaced by a flavorful yet mild vegenaise spread. Try serving the salad on cucumber slices like Angela or rice crackers like I did. Enjoy!
