Last Minute Thanksgiving Vegan Recipe Roundup and Tuesday’s Legalicious Lunge Workout

Are you still trying to decide on what dish or dishes to prepare for Thanksgiving? I am having a super hard time deciding what to make. I would really like to make the FullyRaw Pumpkin Pie listed below but do not have 3 super ripe persimmons and I am learning (I have had a persimmon on my counter for 2 weeks and it is still quite firm) and have read that persimmons can take a LONG time to ripen. My curiosity won’t let me forget about this recipe and I can assure you that when I get my hands on 3 ripe persimmons that I will be giving the pie a try.

I cannot vouch for the recipes listed below as I have not tried them (yet) but wanted to share them with you all the same. If you end up making one of the recipes, I would love to hear how it turns out! Vegan Sourdough Bread Stuffing – when a dish includes sourdough bread, how can it not be good? I am very intrigued by this recipe and cannot wait to try it sometime.

Holiday Salad with Cranberry Apple Orange Vinaigrette – cranberry apple orange dressing sounds delicious in addition to amazing toppings such as chopped apples, chopped pears, dried cranberries and walnuts.

Vegan Spinach Dip – this recipe looks super yummy and provides three variations so everyone will be sure to find one that they love. I am particularly interested in the bean-y variation.

Coconut Crusted Tofu Appetizer Bites with Creamy Green Curry Dipping Sauce – when one utters the words coconut and crusted, I am all ears. The green curry sauce is made creamy with coconut milk and also includes pineapple juice. Yum!

Maple Pecan Pie – the inclusion of maple syrup in this pecan pie recipe has my mouth watering. The author of the recipe states that no one will know that the pie is vegan. I am sold!

Vegan Sweet Potato Pie – sweet potato pie with coconut whipped cream topping. Need I say more?

FullyRaw Pumpkin Pie – I am dying to try this pie because it is both vegan and raw and many have stated that it is absolutely delicious!
