Pineapple Mint Green Juice

I would like to share my absolute FAVORITE juice recipe with you guys. It is sweet, tart and minty while providing lots of green goodness at the same time.

Pineapple Mint Green Juice


  • 1 pineapple
  • 2 bunches of kale
  • 1 bunch of spinach
  • 6 granny smith apples (I sometimes substitute other apple varieties but love the tartness the granny smith apples give the juice.)
  • 1 package of mint (If you happen to grow your own mint, the package I use is 2/3 of an ounce or 18.9 grams.)
  • 1/2 to 1 whole lemon (Adjust according to your liking.)

Note: Sometimes I will add two additional apples and four cucumbers to the mix to produce a larger batch of juice. The cucumbers will mellow out the tart flavor a bit but the juice is still delicious!


  1. Wash all produce.
  2. Peel and chop as necessary.
  3. Juice fruits, veggies and herbs in your juicer.

Note: I use an Omega VRT 350 slow masticating juicer. I like to rotate items as I juice. For example, I might juice several leaves of kale and follow it with a couple of pineapple chunks and an apple slice.

I would like to note that the picture above does not show all of the juice produced by the quantity of ingredients listed above. The juice jar above holds 56 ounces and Justin and I each drank a 16 ounce glass of juice. My estimate for juice yielded is approximately 62 ounces. This amount will be different every single time as produce water content and size vary.
