Red Quinoa and Bulgur Stir Fry

Do you often run out of time in the evenings and find yourself grabbing fast food for dinner? I know, it is so much easier than cooking dinner at home and I am guilty of doing this sometimes. Unfortunately, when I do grab takeout for dinner, I almost always end up regretting my decision when I wake up the next morning feeling less than stellar. This recipe for Red Quinoa and Bulgur Stir Fry is one that you can have ready in 30 minutes or less. Definitely worth the extra time to prepare a healthy meal that will nourish the body.

Red Quinoa and Bulgur Stir Fry


  • 1 1/2 cups of red quinoa and bulgur (I used a package of Central Market Bulgur and Red Quinoa Quick Cook Grains)
  • 1 package of firm tofu
  • 2 small heads or 1 large head of broccoli
  • 4-6 carrots (adjust depending on your preference)
  • 1-2 TBSP of olive oil
  • 2 TBPS of liquid aminos


  1. Drain tofu. Place tofu on two paper towels sitting on top of a cutting board and set a heavy plate on top of tofu to press out additional liquid. Let sit for 15 minutes.
  2. Start cooking quinoa and bulgur according to package directions.
  3. Wash and chop broccoli and carrots.
  4. Cut tofu into small cubes.
  5. Heat olive oil in a skillet over medium heat.
  6. Add liquid aminos and tofu to the skillet.
  7. Increase the heat to slightly higher than medium and cook tofu until lightly browned. Make sure to stir often to prevent burning and to ensure that all sides of tofu brown.
  8. Remove tofu from skillet. Add a little more olive oil and liquid aminos if needed. Add broccoli and carrots to the skillet and cook for 5-10 minutes until slightly softened but still crunchy.
  9. Add vegetables and tofu to quinoa and bulgur and mix together.
  10. Enjoy!
